Cut the celery into three or four pieces, and place in the chicken cavity. 3. Cover with foil and bake for one hour and 15 minutes in the pre- heated oven, to a minimum internal temperature of 180F (82C). Remove from heat, and baste with melted margarine and drippings and re- move cover for about five minutes till golden brown all over. Cover with aluminium foil again, and allow to rest about 30 minutes before serving. Jerk Turkey WHAT YOU’LL NEED: 12lb turkey Ingredients for the dry brine: ■ 3 tablespoons pin sea salt ■ 2 tablespoons sugar ■ 1 teaspoon black pepper ■ 2 tablespoons ground allspice ■ 2 tablespoons onion powder ■ 1 tablespoon smoked paprika ■ For the extra flavour injector: ■ 1 stick unsalted butter ■ 1 tablespoon brine dry mixtur All other ingredients and tools: ■ 10 sprigs fresh thyme ■ 1 whole garlic bulb ■ 1 onion ■ 1/4 cup oil ■ 1/2 Scotch bonnet pepper ■ 3-4 cups chicken stock ■ 3 tablespoons honey ■ 3 scallion stalks cut up ■ 2 tablespoons sliced ginger GRILL ■ Pimento wood chips ■ Charcoal DIRECTIONS: ■ Make sure the turkey is completely defrosted, cleaned and pat dry. ■ In a bowl, combine all the dry brine ingredients. ■ Reserve one tablespoon of the mixture ■ Generously season the turkey with the remaining, on top of and under the skin (directly on the meat) in the cavity; any nooks and crannies you can find, get it everywhere. ■ Place on a wire rack on a baking tray and set in the refrigerator, uncov- ered for 1 to 2 days. ■ Remove the turkey from the fridge an hour before cooking. ■ Melt the stick of butter mix in the tablespoon of brine mixture. ■ Inject the seasoned butter deep into the legs, thighs and breast. ■ Fill the cavity of the bird with the onion, garlic and thyme. ■ For added spice, blend the oil and hot pepper together and rub all over the skin of the bird’s wings, thighs, drumsticks and breast. Leave it out and use oil only. ■ Smoke over low heat on the grill 1-2 hours, make sure the coals are white and ashed over, add wood chips cover and leave to smoke. If one side is getting too hot or dark, you can rotate the bird, so it gets even heat. Offsetting the smoking set-up by en- suring the meat is not over direct heat would be ideal. ■ Transfer to the oven after smoking ■ Add chicken stock, honey, scallion and ginger to the bottomof the pan for basting. Place the turkey raised in a rack above this mixture and finish cooking at 325 Fahrenheit for approximately three hours or until the thigh reads 165 Fahrenheit, basting every 40 minutes. ■ If you don’t have a grill, you can do it all in the oven. Start at a high temperature of 450 Fahrenheit get some colour on the skin for 20 min- utes then drop the temperature to 325 Fahrenheit to finish the cooking, basting every 40 minutes. Honey-glazed Ham INGREDIENTS ■ 1 (10-pound) fully-cooked, bone-in ham ■ 11/4 cups packed dark brown sugar ■ 1/3 cup pineapple juice ■ 1/3 cup honey ■ 1/3 large orange, juiced and zested ■ 2tbs Dijon mustard ■ 1/4tsp ground cloves METHOD: 1. Preheat oven to 325F (165C). Place ham in a roasting pan. 2. In a small saucepan, combine brown sugar, pineapple juice, honey, orange juice, orange zest, Dijon mustard, and ground cloves. Bring to a boil, reduce heat, and simmer for 5 to 10 minutes. Set aside. 3. Bakeham inpreheatedovenuncov- ered for two hours. Remove ham from oven, and brush with glaze. Bake for an additional 30 to 45 minutes, brushing hamwith glaze every 10 minutes. Winning the toss, WCC decided to take first strike in cool conditions and were immediately in trouble from the opening over, losing both openers. First to go was teenage opener Isiah Jagernauth who was caught off the bowling of Quason Alfred for 8. His partner DaveWhyte was dismissed in the following over, also caught for 8 runs. Number three batsman Nicholas Rowe and skipper Owen‘Engine’Earl took the score to 59 before Rowe was caught for 28. New batsman Denva Passley did not last long as he was caught for 6, going for a stroke that was not there. At one stage of the game, WCC were 70 for 4 off 14 overs. It was then that the ‘skipper’ de- cided to take matters in his own hands, as he accelerated the score with some mighty blows to all parts of the ground. He along with Calvin Whyte took 98 ‘runs off the final 6 overs as the champions finished on 168 for 4 off the allotted 20 overs. Earl who finished on 78 not out, was the top scorer. His innings included 5 fours and 5 sixes. Calvin Whyte finished on 29 not out. Bowling for Commonwealth, Roger Whyte took 2 for 29 off 4 overs, Quason Alfred 1 for 26 and Sean Ferguson, 1 for 35. In their turn at bat, Commonwealth started off with a bang as openers Quason Alfred and Alden Campbell took the score to 40 from just 3 overs before Alfred was dismissed by the former Jamaica youth pace bowler DenvaPassley for 20. Campbell was next to go for 15,bowled by Delroy Herman. After their dismissal, the other batsmen were held in check by steady bowling and some su- perb fielding byWCC.
