THURSDAY, DECEMBER 14, 2023 14 | THE GLEANER’S SEASON’S EATINGS EQUIPMENT Pot Blender Frying pot Spatula INGREDIENTS 1 head cauliflower broken into florets 1 egg ¼ cup sugar Pinch salt ¼ cup milk 1 tsp vanilla extract 1 cup flour ¼ cauliflower water oil CAULIFLOWER PANCAKES DIRECTIONS 1. Bring a pot of water to a boil and add the cauliflower florets along with 2 teaspoons of salt. Boil the cauliflower until fork tender. About 7-10 minutes. 2. Drain the cauliflower and place the florets in a blender. Reserve ¼ cup of the cauliflower water. Add the cauliflower to a blender and all the remaining ingredients. Blend until smooth. 3. Heat a large skillet or frying pot over low to medium high heat and oil lightly. Add ⅛ cup of the batter to the pot. Wait till bubble formation stops then flip over. Wait for 1.5 minutes then remove from heat. 4. Repeat until the batter is finished. 5. Server and enjoy. Renae Richards & Shaheim Edmondson
