THURSDAY, DECEMBER 14, 2023 28 | THE GLEANER’S SEASON’S EATINGS Yield: 10 Balls INGREDIENTS 1/2 cup mashed pre cooked sweet potatoes 1/2 cup mashed pre cooked pumpkin 1 purple onion (finely minced) 4 broad leaf thyme (finely minced) 2 tablespoons salt 1 tablespoon black pepper 1/3 cup whole wheat flour 3 cups coconut oil PUMPKIN SWEET POTATO BALLS DIRECTIONS 1. In a bowl combine sweet potato, pumpkin, onion, thyme salt and black pepper. Stir until ingredients are well incorporated. 2. Gradually add flour to the mixture until a firm batter is formed. 3. Roll batter into mini golf size balls. 4. Heat coconut oil in a frying pan. Shallow fry the balls until golden brown. 5. Serve and enjoy! TIPS AND SUBSTITUTIONS 1. For extra flavour boost, pre cook the pumpkin and sweet potatoes with pimento leaves. 2. 1/2 cup of all purpose flour may be substituted for the wholewheat flour. 3. 1 sprig finely minced fresh thyme or 1/2 tbsp of dried thyme may be substituted for the broad leaf thyme. 4.
