THURSDAY, DECEMBER 14, 2023 60 | THE GLEANER’S SEASON’S EATINGS INGREDIENTS 3/4 cup butter, softened 3/4 cup sugar 1 large egg, room temperature 1/2 cup plain yoghurt 1/2 teaspoon almond extract 1 cup all-purpose flour 1/4 teaspoon baking soda 1/4 teaspoon salt 1/2 cup red candied cherries, chopped MINI CHERRY MUFFINS DIRECTIONS 1. In a small bowl, cream butter and sugar. Beat in the egg, yoghurt and extract. Combine the flour, baking soda and salt; stir into creamed mixture just until moistened. Fold in cherries. 2. Fill greased or paper-lined miniature muffin cups two-thirds full. Bake at 350°F for 15-17 minutes, or until a toothpick comes out clean.
