THURSDAY, DECEMBER 12, 2024 14 THE GLEANER’S CHRISTMAS COOKBOOK METHOD INGREDIENTS 1 2 3 4 By: Nashari McLeary Tel: 876-333-7856 School: The Mico University College Department: Human Ecology and Hospitality Services 6 medium shrimp 1 tsp Maggi fish seasoning 1 tsp all purpose seasoning 1/2 tsp black pepper 1 tsp diced garlic 1 tbsp diced onion 1 tsp chopped Scotch bonnet pepper 1 avocado 1/4 tsp salt 1 tbsp lime juice 1 1/2 cucumber, sliced into 6 rings 2 tbsp chopped scallion Prepare the shrimp: Season the shrimp with Maggi fish seasoning, all-purpose seasoning, black pepper, garlic, and Scotch bonnet pepper. Sauté the shrimp in a hot pan for 2-3 minutes per side or until pink and cooked through. Prepare the avocado: Peel, pit, and mash the avocado. Add salt, lime juice, and diced onion to the mashed avocado. Assemble the bites: Place the cucumber rings on a plate. Spoon a small amount of avocado mixture into each cucumber ring.
