THURSDAY, DECEMBER 12, 2024 32 THE GLEANER’S CHRISTMAS COOKBOOK Roasted Candy Orange Sauce Chicken Prep: Wash chicken, then pat dry and set aside Blended home-made wet seasoning: Pimento seeds Rosemary Browning Garlic Ginger Scallion Thyme Sweet Pepper Scotch bonnet pepper Dry seasonings: Oregano Garlic powder Onion powder Maggi all-purpose seasoning Salt Pepper Basting: Pepper sauce Orange juice Sugar Ginger Smoked paprika Maple syrup Cornstarch Season chicken with both wet and dry ingredients, place in an oven-safe pan, and roast chicken at 425°F (218°C) oven for 45 minutes to 1½ hours, depending on size. Baste every 10 minutes between cooking and continue baking until the juices run clear when you cut between a leg and thigh.
