TUESDAY, DECEMBER 16, 2025 12 CHRISTMAS COOKBOOK | THE GLEANER | TUESDAY, DECEMBER 16, 2025 INGREDIENTS 2 cups bok choy (washed, finely chopped and blended ) 1 cup crushed pineapple (blended) 2 cups all-purpose flour 1 ½ tsp baking soda 1 tsp baking powder 1 tsp ground cinnamon ½ tsp nutmeg ½ tsp salt 1 cup sugar (white or brown) ½ cup vegetable oil 3 large eggs 1 tsp vanilla extract ½ cup raisins METHOD 1. Wash bok choy, trim off ends, finely chop and blend with pineapple . 2. In a bowl, combine flour, baking soda, baking powder, cinnamon, nutmeg, and salt. 3. In another large bowl, beat together sugar, oil, eggs, and vanilla. 4. Stir in bok choy and pineapple. 5. Gradually add dry ingredients into the wet, mixing gently. 6. Fold in nuts/raisins if using. 7. Pour into a greased 9x13-inch pan (or two loaf pans). 8. Bake at 350°F (175°C) for about 35-40 minutes, or until a toothpick comes out clean. 9.
