These Festive Fruit Tartlets will give you not only that warm heart smile but also that wow in your tummy that will have you going back for more. Servings: 8 Fruit Tartlets INGREDIENTS TARTLET SHELLS • 1 cup unsalted butter or marga- rine, softened • 2 tbsp granulated sugar • 1 egg yolk, room temperature • 1 tsp vanilla extract • 1 cup all-purpose flour PASTRY CREAM • 1lb cream cheese, softened • ½ cup powdered sugar • 4oz butter or margarine • 1 tsp vanilla • 1 tbsp rum TOPPING • Fruits of choice • Corn syrup for glazing, optional METHOD 1. Add softened butter and sugar into a bowl. Using a spoon or a rubber spatula, mix together until combined. Add egg yolk and vanilla extract and continue mixing until fully incorporated. 2. Add flour andmix until it forms a dough. (Do not overmix). Cover with plastic wrap and refrigerate for 30 minutes. 3. Remove dough from the fridge and take small pieces and press evenly into 2.5” tart moulds or mini cupcake pans. (You can make these whatever sizes you want. The number of tarts will vary, depending on the size of the tart shells). 4. Bake in a 350 degrees F pre- heated oven for 20 minutes or until browned evenly. Remove from oven and cool completely before removing from moulds. 5. TO MAKE PASTRY CREAM, com- bine all ingredients until smooth. Refrigerate for 20 minutes. 6. PREPARE TOPPING by cutting up your favourite fruits and dipping in corn syrup to glaze them, so they stay fresh, longer. (Some popular fruit options include strawberry, blue- berry, raspberry, mango, pineapple, candied sorrel, peach, grapes, and the list goes on). 7. TO ASSEMBLE TART, place pas- try cream in a piping bag or Ziploc bag, cut a hole at the tip and squeeze desired amount into baked tart shell. Top with glazed fruits. Continue until all the tart shells are filled and topped with fruits. 8. Refrigerate until ready to serve. Serve cold. ENJOY!
