Wash lobster then dry with a paper towel, season with salt and pepper. (Keep seasoning simple). 2. Heat a non-stick pan over mediumheat, then add cooking oil and butter, allow to heat up. 3. Sear lobster tail on both sides for 2 minutes. 4. Coat lobster with sorrel sauce and con- tinue cooking for 1 minute. Sauce 1 cup sorrel beer ½ cup sorrel juice 2 tsp brown sugar Salt to taste DIRECTIONS 1. In a saucepan, add sorrel beer and sor- rel juice, reduce on medium heat then add sugar. Stir continuously until sugar dissolves. 2. Add salt to taste if necessary. NOTE: You can add cornstarch or flour mixture to thicken. Pineapple salsa ½ cup pineapples, cut in small pieces ½ cup green bell peppers ½ red onions, diced ½ tomatoes, diced Fresh lemon juice Add jalapeno for a little heat DIRECTIONS Combine all ingredients in a bowl andmix.
