TUESDAY, DECEMBER 14, 2021 40 INGREDIENTS BEST DRESSED Chicken Drumsticks ½ tbsp all-purpose seasoning ½ tbsp chicken seasoning ½ tbsp hot wings seasoning ½ tbsp paprika 1 tsp egg powder (optional) 2 cups flour 2 tbsp cornstarch 2 cups ketchup 1 tbsp soy ginger sauce Scallions (garnish) METHOD 1. Wash the chicken legs with lime and vinegar. Then cut the chicken legs at the top, ensure not to cut through the bone. Use your hands to push the meat down into a lollipop shape and remove the loose skin at the top of the bone. 2. Season your chicken with your pow- dered seasonings and let it rest in the fridge for 3 hours minimum. Divide your drum- sticks in two equal batches, one batch will be fried and the other will be baked. 3. Fried Lollipops – In a bowl, add flour and cornstarch. Lightly coat your chicken lollipops in it, let them rest for 2 minutes then fry at medium heat for 18 minutes. 4. Baked Lollipops – Set your chicken lollipops standing on a small baking tray and place in the oven at 350 degrees F or 176 degrees C for 20 minutes. 5. In a saucepan on low heat, add 1 cup of water, ketchup and ginger soy sauce, let simmer for 5minutes then dip your Chicken Lollipops in the sauce to coat them fully. Place them back in the oven and continue baking. Repeat your coating every 5 min- utes until the desired colour is achieved. 6. Wrap the ends of your Chicken Lollipops in foil paper for easy handling and serve hot with your preferred dipping sauces.
