THURSDAY, DECEMBER 16, 2021 14 THE GLEANER’S DRINKABILITY | Servings: 6-8 Prep time: 20-30 minutes 16oz or 1lb pumpkin 1 cinnamon stick 3.5 cups coconut milk (box)* One 14oz can condensed milk ¼ cup coconut flavoured rum ¼cupwhite rumor dark spiced rum 1 tbsp vanilla 1 tbsp pumpkin spice blend (optional)* See recipe below Pinch of salt INSTRUCTIONS 1. Wash and chop pumpkin with skin on and put to boil with ½ tea- spoon salt and a cinnamon stick. Cook until fork tender. Once cooked, remove pumpkin from water and cool for 10 minutes in refrigerator. 2. In a blender, combine pump- kin and remaining ingredients and blend until smooth and creamy. 3. Chill or serve over ice and DRINK RESPONSIBLY! • PUMPKIN SPICE BLEND ¼ cup roasted pumpkin seeds 2 teaspoon cinnamon powder 2 teaspoon grated nutmeg. METHOD In a blender or spice grinder, grind ingredients until fully incorporated. (Store in airtight container). Side Note: *Use whatever milk you desire, doesn’t have to be coco- nut milk, this was just a preference. I used the brand Silk Coconut milk.
