THURSDAY, APRIL 10, 2025 20 COOKBOOK THE GLEANER | For the shrimp • 4 tbsp butter or margarine • 2 tbsp olive oil • 4 cloves garlic • 1 lb shrimp • ¼ tsp salt • ¼ tsp black pepper For the sauce • ¼ cup chicken stock • ½ tsp red pepper flakes • 2 tbsp lemon juice • 2 tbsp parsley • 1 cup heavy cream For serving • 14oz (400g) Spaghetti, cooked Creamy Shrimp Scampi METHOD 1. In a large skillet over medium-high heat, melt 4 tbsp butter and 2 tbsp olive oil together. 2. Add the minced garlic and cook for about 30 seconds, until fragrant. 3. Add the shrimp, salt, and black pepper. Cook until the shrimp, about 2-3 minutes per side. 4. Stir in the chicken stock, heavy cream and red pepper flakes. 5. Bring the mixture to a simmer and cook until the liquid reduces by half and the shrimp are fully cooked, about 3-4 minutes. 6. Remove from heat and stir in the remaining 2 tablespoons of butter, lemon juice, and parsley. 7. Serve immediately over hot cooked pasta or with warm crusty bread.
