THURSDAY, APRIL 10, 2025 8 COOKBOOK THE GLEANER | Quinoa with Sweet Corn and Black Beans Snow Peas with Sesame Seeds • 100g snow peas • 5g sesame seeds • 2g sea salt • 10ml flavoured oil (rosemary & pimento) METHOD 1. Heat flavoured oil in a pan over medium heat. 2. Add snow peas and sauté for 2-3 minutes. 3. Sprinkle with salt and sesame seeds, then toss well. 4. Cook for an additional minute and serve warm. Rinse quinoa under cold water. 2. In a saucepan, bring coconut milk to a boil and add quinoa. 3. Reduce heat, cover, and simmer for 15 minutes or until quinoa is tender. 4. Stir in black beans, sweet corn, salt, white pepper, and flavoured oil. 5. Cook for an additional 5 minutes, then fluff with a fork and serve.
