Coconut Pie
INGREDIENTS

cups milk
1 cup sugar

cup flaked coconut
2 eggs, lightly beaten
3 tablespoons all-purpose flour
1 tablespoon butter, melted

teaspoon vanilla extract
1 unbaked pastry shell (9 inches)
METHOD
In a large bowl, combine the
milk, sugar, coconut, eggs, flour,
butter and vanilla. Pour into pie
shell.
Bake at 350° for 50 minutes or
until a knife inserted near the
centre comes out clean. Cool to
room temperature. Refrigerate
leftovers. Yield: 6-8 servings.

Coffee Cake
Mix topping for the coffee cake
before mixing cake.
INGREDIENTS

cup brown sugar
1 tbsp flour
1 tsp cinnamon
1 tbsp melted butter

cup broken nuts (almonds,
walnuts etc)

cup salad oil or melted
shortening
1 beaten egg

cup milk

cups sifted flour

cup sugar
2 tsps. baking powder

tsp salt
METHOD
1. Combine brown sugar, flour,
cinnamon, melted butter and 1/2
cup broken nuts for topping. Set
aside.
2. Preheat oven to 375 degree
F, about 15 minutes.
3. Grease a 9 x 9 x 2 inch pan.
4. Combine salad oil, egg and
milk.
5. Sift together dry ingredients.
6. Add milk mixture and mix
with dry ingredients.
7. Pour into greased pan.
8. Sprinkle topping over batter
and bake for about 25 minutes or
until well done. Serve warm.

Grace Fruit Cake
INGREDIENTS

lb Grace Hello Margarine

lb dark sugar
4 medium eggs
1 teaspoon vanilla/almond flavouring
1 pound cake and pastry flour
1 tablespoon baking powder

cup breadcrumbs
2 teaspoons mixed spice/nutmeg
1 tablespoon Grace Browning
3 cups fruit wine
1 cup rum
3 cups soaked mixed fruits

cup cherries
1

cup crushed peanuts
METHOD
1. Cream Grace Hello Margarine and sugar until
light and fluffy.
2. Gradually beat in eggs one at a time. Stir in
vanilla or almond flavouring.
3. Combine flour, baking powder, breadcrumbs,
mixed spice or nutmeg and mix well.
4. Fold the flour mixture into the creamed mixture
alternately with the Grace Browning, fruit wine, rum,
soaked mixed fruits, cherries and crushed peanuts.
5. Scrape batter into a greased and lined 325 cm
(10 inch) baking tin. Bake for 1 1/2 hours at
180°C/350°F or until a skewer inserted comes out
clean.
6. Allow to cool.
Note:
Serve with Butter Brandy Sauce
Yield:
